118th edition, #8 for me.
Appetizer
Do you believe there is intelligent life on other planets?
No, not really.
Soup
What is one thing you said you’d never do, but you eventually did?
Sing a solo. But I don’t think I could ever do it again.
Salad
Who is the teacher that influenced you the most in school?
Wow, this would be hard to pin down to just one. But if I had to choose just one who most influenced me, it would be Dr. Walter Fremont, for many years Dean of Education and Psychology professor at BJU. He taught and wrote many things about the Christian family, was a cheerful godly example in everything he did, and has bravely dealt with Lou Gehrig’s disease for 20 years. When he was first diagnosed, he was given 2-5 years to live, and asked the Lord for 15. God has given him many more. His wife’s testimony is at the No Tears In Heaven web site (unfortunately the different testimonies do not have direct links, but you can find it by going to the web site, clicking on the “Peace, Be Still” link in the side bar, and scrolling down to “Trudy Fremont.”) Both of the Fremonts have greatly influenced me both by the truths they taught as well as the truths they lived.
Main Course
If you could trade places with anyone for one day, who would it be and why?
I honestly can’t think of anyone. I like my life.
Dessert
What is your favorite dish to prepare?
Well, that all depends on a lot of things. I don’t think I have just one favorite dish — and there are some I love to eat but don’t prepare often because they are more labor intensive (I love the results but not necessarily the preparation.) Probably my most often prepared dessert is a brownie mix from a box.
But my favorite from-scratch one would be Pudding Chip cookies (chocolate chip cookies with vanilla pudding mix added in the dough). Main dish? Favorite one to eat would probably be lasagna from scratch. Favorite one to prepare would probably be one using chicken tenderloins (here and here) because they are so easy to use. One of our family favorites would be the Chicken Enchilada Bake (at the first link). But my all-time favorite one (though very labor-intensive) is Ramen Chicken Noodle Stir-Fry — but I am not sharing that one because I am thinking of entering it into a contest.

Singing a solo when I was a junior in high school was real scary. But I ended up being Glee Club president so it was all fun!
Come dine with me. My feast is served!
